Marc,

I've never eaten true Poke Salad myself, but have heard that it's similar in 
taste to spinach salad, just a little more "tangy."  I think most of the 
festivals use just regular green salads, since pokeweed may not be the safest 
thing to eat nowadays.

Strange customs we Southerners have, hi!  :o)
